LOVE this soup. This is a fall/winter staple for me.
2 No-Chicken Bouillon Cubes
1/2 Onion (I used white)
3 chopped carrots
Shirataki Noodle (drained)
1 Cup chopped kale
1 Cup chopped spinach
1/2 a container of miso (roughly 4 oz) I used white miso
1/2 tbsp of tamari (optional)
1 Package Chicken Style Seitan (drained)
A few dashes of poultry seasoning
Fill a large pot a little more than half way (roughly 4 oz) with water. Cook on high heat. Add all ingredients and bring to a boil. Once it’s heated thoroughly make sure the bouillon and miso are melted. Stir a few times to make sure seasonings are mixed in. Reduce heat to low and simmer until carrots are soft. Enjoy!
