I like to think I’m pretty internet literate. Not to brag, but I’m more than savvy with social media like Facebook, Twitter, Instagram and Pinterest. Yes, sites like Tumblr, Reddit and StumpleUpon baffle the hell out of me, but who really needs/uses them anyway but teenagers and perverts?
Of all of these sites I find, like most 45 year old women (I’m 29), Pinterest to be the most useful. And while I may never be able to make beautiful, high-end, designer-inspired desserts; I make a mean Salad-in-a-Jar.
This is my second warm weather season making these (opting for soups in the winter) and I have to say I’m pretty impressed with my stick-to-it- ness and chef-quality salads. I should mention I usually go for pre-made, store-bought dressings, but let’s just pretend those don’t “make” the salad. 😉
For this week I opted for a Sun Dried Tomato and Lemon Couscous Salad
Ingredients (In order of how to be placed in the jar):
Dressing (This was my cheat, it’s a Sun Dried Tomato dressing)
Cannelini or Great Northern Beans
Lemon Couscous (made with garlic, lemon zest and salt)
